My Easy Hummus Chicken - Baked Chicken Recipes
In this recipe we are using chicken breasts. Chicken breasts are lean meaning they have less fat and more protein. The downside to chicken breast over chicken thighs is that they aren’t as moist. One way to add moisture back to them is using a sauce or a spread such as hummus. You should add this to your baked chicken recipes as well as it being the easiest chicken recipe with under 5 ingredients. I know when I am strapped for time, I tend not to marinate the chicken for even the minimum of 15-30 minutes. This makes any chicken breast dry. This one dish chicken recipe can be added to a hummus pasta dish with cherry tomatoes, onions, and arugula for a complete balanced meal.
Ingredients:
1/2 cup of your favorite hummus
two skinless, boneless chicken breasts
1/2 lemon, juiced
1 tsp paprika
Dollop hummus on top of chicken breast with splash of lemon juice and paprika and bake at 400F for 20ish minutes until chicken reaches 165F internal temperature. Recipe adapted from All Recipes
What is hummus?
Hummus is a middle eastern dip that is made from cooked chickpeas blended with tahini, lemon juice, garlic and olive oil topped with parsley and paprika. This savory spread has a rich and creamy texture that goes well with fresh vegetables and pita. There are many different flavored hummus recipes such as roasted red pepper, pine nut, balsamic glaze, avocado, black bean, and many more. There are even sweet hummus variations like chocolate and cookie dough. Traditionally hummus is savory. My favorite is homemade hummus. If you have time, use dried garbanzo beans, soak them overnight then cook and let them cool. There is a layer on the bean that you can take off once cooked (time consuming). It is worth the creamier texture. You can use canned beans and still take that outer layer off as well. You can cut time down by buying pre-made hummus from your local grocery store.

How long does hummus last?
Homemade hummus stored in the refrigerator should last about four days. If store-bought, typically about a week or so.
How to use hummus in recipes?
You can use hummus instead of mayo/ yogurt/ sour cream in some situations such as salad dressings, sauces, and spreads.
