Creamy Hummus Pasta with Cherry Tomatoes + Chicken

Hummus pasta with chicken

INGREDIENTS

This recipe makes enough for about two people and takes about 30 minutes.

  • 2 servings of pasta

  • 1 cup hummus

  • 2 cups cherry tomatoes (halved)

  • Large handful of arugula

  • Fresh basil

  • 1 lemon, Lemon juice and lemon zest 

  • ½ white onion, diced (Optional)

  • 2 garlic cloves, diced or zested

  • dash of paprika, salt, pepper

  • 1 lbs of chicken breast

MAKING THE DISH

Directions

  1. Prepare pasta as written on the box.

  2. Pre-heat oven to 350F

  3. Sprinkle paprika, salt and pepper on chicken breasts. Coat 1/2 cup of the hummus ontop of the chicken breasts and add 1/2 of a lemon squeezed ontop. Once oven is pre-heated, place chicken on a baking sheet with olive oil and put in the oven. Cook for about 20-30 minutes depending on the size of the chicken. Make sure internal temperature of chicken is 165F.

  4. While chicken is cooking, halve cherry tomatoes and sauté them with diced onion in a non-stick pan with olive oil and diced (or zested) garlic on medium heat until they begin to pop. *Instead of dicing garlic, you can zest garlic like you would lemon zest, be sure to go one way with the zester to make it easier.

  5. Add cooked pasta and the remaining 1/2 cup of the hummus to the pan and stir until everything is coated through.

  6. Zest the lemon (use about 1 tsp zest), squeeze 1/2-1 full lemon juice and stir into the hummus pasta/tomato/onion pan.

  7. Add arugula & fresh basil ontop/ mixed in.

  8. Once your chicken is done baking, add that ontop your hummus pasta mixture and enjoy!

*I recommend doubling this recipe especially if you are cooking for two and want leftovers!
